Course Objective:
The principal objective of this course is to discern the fundamental rules and regulations involved in the maintenance of food and water safety. A generic understanding regarding the protocols for food safety, analysis of the microbial standards for various food items and studying the rapid detection methods for food borne pathogens/spoilage/adulterants would be the main areas covered by the course. This would then be followed by effective hands-on training. Successful completion of the course would therefore provide the students with a better understanding regarding these concepts, would imbibe an interest in food industry and food spoilage and safety related research.
Modules:
HACCP for Food Safety and Microbial Standards.
Cultural and rapid detection methods of food borne pathogens in foods.
Detection of adulterants in different food products.
Assessment of potability of water and milk.
